Ingredients
- 2 cups milk
- juice of 1/2 of a lemon
- 1 1/2 cups masa harina
- 2 tsp baking powder
- 1/2 tsp kosher salt
- 2 large eggs
- 1/3 cup vegetable oil (optional)
- 1/4 cup honey
- butter and maple syrup (optional)
- 1 pint fresh strawberries
Steps
- Mix the milk with lemon juice and let it stand for 5 minutes.
- Stir in masa harina, baking powder, salt, eggs, honey, and vegetable oil if using until just combined.
- Slice the strawberries and toss them with vanilla sugar.
- Heat a lightly oiled griddle or large skillet to 375 F.
- Pour about 1/4 cup batter for each pancake and cook 2 to 3 minutes per side until browned and cooked through.
- Serve the pancakes with the vanilla strawberries and maple syrup or butter if using.
