Ingredients

1/2 cup salted butter
1/4 cup brown sugar
1 egg yolk
1/2 tsp pure vanilla extract
1 cup unbleached all-purpose flour
1/4 tsp salt
1/8 tsp baking soda
2 tbsp sugar
1/3 cup mincemeat (optional)

Steps

Heat the oven to 350 F and grease a baking sheet with butter.
Beat the butter and brown sugar until smooth, then beat in the egg yolk and vanilla.
Stir in the flour, salt, and baking soda until a soft dough forms.
Roll the dough into 16 balls, coat them with sugar, and place them on the sheet.
Press a well into each ball and fill each well with mincemeat.
Bake for 10 to 12 minutes, until the edges are lightly browned, then cool.
