- 3/4 cup sugar
- 3/4 cup packed light brown sugar
- 2 eggs
- 1 tsp vanilla
- 1 1/4 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp cinnamon
- 1/2 tsp salt
- 3 cups quick oats or 3 cups oats
- 1 package (10 oz) butterscotch chips
Steps
- Heat the oven to 375 F and line two baking sheets with parchment.
- Beat butter, sugar, and brown sugar in a large bowl until smooth, then mix in eggs and vanilla.
- Stir flour, baking soda, cinnamon, and salt into the butter mixture.
- Fold in oats and butterscotch chips until evenly combined.
- Drop rounded spoonfuls of dough onto the baking sheets, leaving space between them.
- Bake for 10 to 12 minutes, then cool the cookies on the sheets for 5 minutes.
