Ingredients

24 oysters
1/2 tbsp extra virgin olive oil
2 shallots
9 oz fresh baby spinach
2 oz 1/3 less fat cream cheese
3 tbsp half & half cream
3 tbsp grated pecorino romano
1/4 cup plain or gluten-free panko crumbs

Steps

Heat the oven to 450 F.
Cook the shallots in olive oil in a large skillet over medium heat for 3 minutes.
Add the spinach and cook for 3 minutes until wilted, then stir in the cream cheese, half and half, and pecorino.
Arrange the oysters in their shells on a baking sheet and spoon the spinach mixture over them.
Sprinkle the panko over the oysters and bake for 8 to 10 minutes until the edges curl and the topping is browned.
