Ingredients
- 1/2 cup pitted medjool or deglet noor dates
- 3/4 cup raw almonds or roasted peanuts
- 1/2 cup mini pretzels (optional)
- 1/2 cup salted natural peanut butter
- 1 1/4 cups chopped dairy-free dark or semisweet chocolate
- 1 tsp coconut oil (optional)
Steps
- Blend the dates, almonds or peanuts, and pretzels in a food processor until finely chopped.
- Add the peanut butter and blend until the mixture forms a sticky dough.
- Roll the mixture into 18 small balls and place them on a lined plate.
- Melt the chopped chocolate with the coconut oil in a heatproof bowl.
- Dip each truffle in the melted chocolate and return it to the plate.
- Chill the truffles for 10 minutes, until the coating is firm.
