Ingredients
- 1/2 cup olive oil
- 1/3 cup fresh cranberries
- 3/4 tsp orange zest
- 2 tbsp fresh orange juice
- 1 tbsp honey
- 1 tbsp granulated sugar
- 2 tsp dijon mustard
- 1/2 tsp salt
- 5 oz baby spinach
- 2 bartlett pears
- 3/4 cup pomegranate arils
- 3/4 cup chopped pecans
- 1/3 cup crumbled goat cheese (optional)
Steps
- Blend the cranberries, orange zest, orange juice, honey, sugar, mustard, salt, and olive oil until mostly smooth.
- Wash and dry the spinach, then slice the pears into thin wedges.
- Toss the spinach and pears with the vinaigrette in a large bowl for 2 minutes.
- Fold in the pomegranate arils, pecans, and goat cheese, then chill or serve within 20 minutes.
