Ingredients
- 5 cups packed baby spinach
- 1/2 cup packed fresh basil
- 1/2 cup grated parmesan cheese
- 1/4 cup pine nuts
- 1/4 cup sun dried tomatoes
- 1 clove garlic
- salt and pepper
- 3 tbsp extra virgin olive oil
- 1 1/2 cups plain couscous
- 2 cups broth or water
Steps
- Process the spinach, basil, parmesan, pine nuts, sun-dried tomatoes, garlic, olive oil, salt, and pepper until smooth.
- Bring 2 cups of water to a boil in a medium saucepan.
- Stir in the couscous, cover the pan, and remove it from the heat for 5 minutes.
- Fluff the couscous with a fork and stir in the pesto.
- Warm the couscous over low heat for 2 minutes, adding water if needed.
