Ingredients
- 2 cups cherry tomatoes
- 1/3 cup almonds
- 2 cloves garlic
- 1/4 cup packed basil leaves
- 1 pepperoncini
- 1 pinch crushed red pepper flakes
- 1/4 cup freshly grated pecorino romano cheese
- 3 tbsp extra-virgin olive oil
- 1 lb rotini pasta
- coarse salt and freshly ground pepper
Steps
- Cook the rotini in salted water until tender, reserving 1 cup pasta water before draining.
- Pulse the tomatoes, almonds, garlic, basil, pepperoncini, red pepper flakes, pecorino, and olive oil until chunky.
- Toss the hot pasta with the pesto in a large bowl.
- Add pasta water a little at a time until the sauce coats the noodles.
- Season with salt and pepper and serve immediately.
