3 large zucchini
3 tbsp store-bought or homemade pesto
2 tbsp freshly grated parmigiano-reggiano (optional)
2 tbsp pine nuts
salt and freshly ground black pepper
2 tbsp extra-virgin olive oil

Steps

Cut the zucchini into noodles and pat them dry with a clean towel.
Toast the pine nuts in a 10-inch skillet over medium heat for 3 to 4 minutes, stirring often.
Remove the pine nuts and heat the olive oil in the same skillet over medium heat.
Cook the zucchini noodles for 4 to 5 minutes, stirring gently, until just tender.
Turn off the heat and toss the noodles with pesto, salt, pepper, and Parmigiano-Reggiano.
Top with the toasted pine nuts and serve within 5 minutes.
