Ingredients

1 pheasant
paprika
2 1/2 tbsp butter
1 cup water
1 tsp instant chicken bouillon
1/2 cup orange marmalade
1/4 cup orange juice
1/4 tsp pumpkin pie spice (optional)

Steps

Heat the oven to 375 F and place the pheasant in a 9-by-13-inch baking pan.
Rub the pheasant with paprika, salt, pepper, and 1 1/2 tablespoons butter, then pour the water mixed with bouillon around it.
Roast the pheasant for 40 minutes, then continue cooking until the thickest thigh reaches 165 F.
Melt the remaining butter in a saucepan over medium heat and simmer the marmalade, orange juice, pumpkin pie spice, and pan liquid for 8 minutes.
