Ingredients
- 2 tbsp plain flour
- 2 tbsp icing sugar
- 375 g puff pastry
- 250 g caster sugar
- 2 strips lemon zest
- 1 stick cinnamon
- 2 eggs
- 4 egg yolks
- 50 g corn flour
- 500 ml whole milk
- pod of vanilla
Steps
- Heat the oven to 475 F and oil a 12-cup muffin pan.
- Roll the puff pastry, dust it with flour and icing sugar, cut twelve rounds, and press them into the pan.
- Simmer the milk with caster sugar, lemon zest, cinnamon, and split vanilla for 5 minutes, then remove the flavorings.
- Whisk the eggs, yolks, corn flour, and remaining flour with a little warm milk, then stir the mixture into the pan.
- Cook the custard over medium heat for 3 minutes, stirring until thick, then fill the pastry cups.
- Bake the tarts for 12 to 15 minutes until browned and set, then cool them for 10 minutes.
