Ingredients
- 1/2 cup + 2 tablespoons pure canned pumpkin purée
- 3/4 cup coconut sugar
- 1 egg
- 1 egg yolk
- 1/2 tbsp vanilla extract
- 3/4 cup + 2 tablespoons almond meal
- 2 tbsp coconut flour
- 3/4 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 tsp cinnamon
- 2 1/2 tsp pumpkin pie spice
Steps
- Heat the oven to 350 F and grease an 8-inch square pan.
- Whisk the pumpkin, coconut sugar, egg, egg yolk, and vanilla in a large bowl.
- Stir in the almond meal, coconut flour, baking powder, baking soda, salt, cinnamon, and pumpkin pie spice.
- Spread the batter in the pan and bake for 30 minutes, until the center is firm.
- Cool the bars in the pan for 10 minutes before cutting them.
