Ingredients
- 1/4 pie pumpkin
- 2 dry ancho chilies
- 2 tbsp almonds
- 1 1/2 tsp canola oil
- 1/2 white onion
- 3 cloves garlic
- 1 tomato
- 1/2 tsp salt
- 1/4 tsp cinnamon
- 1 cup vegetable broth
Steps
- Heat the oven to 400 F.
- Cut the pumpkin into chunks and roast it on a baking sheet for 35 minutes.
- Toast the ancho chiles and almonds in a dry skillet over medium heat for 3 minutes.
- Cook the onion, garlic, and tomato in the oil over medium heat for 8 minutes.
- Blend the roasted pumpkin, toasted chiles, almonds, onion mixture, salt, cinnamon, and broth until smooth.
- Simmer the sauce in a medium saucepan over low heat for 15 minutes.
