Ingredients
- 200 g / 7oz oreo cookies
- 60 g / 4 tbsp unsalted butter
- 2 tsp gelatine powder
- 2 tbsp water
- 1 cup heavy/thickened cream
- 500 g / 1 lb cream cheese
- 3/4 cup caster sugar / superfine sugar
- 1 tsp vanilla extract
- 150 g / 5 oz 70% chocolate
- 6 tsp red food colouring - uk readers especially!
- 1 1/4 cups heavy/thickened cream
- 3 tbsp caster sugar / superfine sugar
- 1 tsp vanilla extract
- optional - stabilise the cream so it doesn't deflate
- 2 tbsp shaved or grated dark chocolate
Steps
- Crush the Oreo cookies, mix them with melted butter, and press the mixture into a 9-inch springform pan.
- Sprinkle the gelatin over the water, let it stand briefly, and warm it until smooth.
- Melt the chocolate, then beat it with the cream cheese, caster sugar, vanilla, food coloring, and gelatin.
- Whip 1 cup of cream until thick, fold it into the chocolate mixture, and spread the filling over the crust.
- Whip the remaining cream with caster sugar and vanilla, spread it on top, add shaved chocolate, and chill for 15 minutes.
