Ingredients

  • 5 cups water
  • 1/3 cup extra virgin olive oil
  • 1/2 yellow onion
  • 4 cloves garlic
  • 2 bay leaves
  • 1 tbsp kosher salt
  • 2 tbsp vegetable oil
  • 1 tsp freshly ground black pepper

Steps

  1. Rinse the beans and place them in a 6-quart pressure cooker with the water, onion, garlic, bay leaves, salt, and pepper.
  2. Cook at high pressure for 25 minutes, then let the pressure release naturally for 10 minutes.
  3. Remove the bay leaves and drain the beans, reserving 1 cup cooking water.
  4. Heat the vegetable oil in a large skillet over medium heat for 1 minute.
  5. Add the beans and mash them with a sturdy spoon for 8 minutes, adding reserved water until creamy.
  6. Cook for 2 more minutes, then check that the beans are tender before serving.
