Ingredients

8 cups cauliflower florets
1/2 red bell pepper
1/2 green bell pepper
3 tbsp olive oil
3 tbsp taco seasoning
3 cloves garlic
salt and black pepper (optional)
8 small flour tortillas
1 lime
3 tbsp chopped fresh cilantro

Steps

Heat the oven to 425 F and oil a large rimmed baking sheet.
Toss the cauliflower, sliced peppers, garlic, olive oil, taco seasoning, salt, and pepper on the baking sheet.
Roast the vegetables for 22 minutes, stirring once, until browned and tender.
Warm the tortillas in a dry skillet over medium heat for about 30 seconds per side.
Fill the tortillas with the roasted vegetables and top with lime juice and cilantro.
