- 12 chicken legs
- 1 tsp dried oregano leaves
- 1 tsp ground coriander
- 1 tsp smoked paprika
- 1/2 tsp dried thyme
- salt and pepper
- 3 cloves garlic
- 2 tbsp extra virgin olive oil
- 2 tbsp lemon juice
- 4 slices lemon (optional)
- 1 tsp fresh parsley (optional)
Steps
- Heat the oven to 425 F and oil a large rimmed baking sheet.
- Mix the oregano, coriander, paprika, thyme, salt, pepper, garlic, olive oil, and lemon juice in a bowl.
- Coat the chicken legs with the seasoned mixture and arrange them on the baking sheet.
- Add the lemon slices if using, then roast for 35 to 40 minutes.
- Check that the thickest chicken pieces reach 165 F before serving.
