Ingredients
- 2 large peaches
- 4 cups cherry tomatoes
- 1 shallot
- 3 cloves garlic
- 2 tbsp extra virgin olive oil
- 1 tbsp honey
- salt & pepper
- 1/4 cup basil leaves
- 1 tbsp balsamic vinegar
- 1/4 tsp cinnamon
- 1 pinch red pepper flakes
- 1 lb barilla plus spaghetti
Steps
- Heat the oven to 425 F and bring a large pot of salted water to a boil.
- Toss the peaches, tomatoes, shallot, garlic, olive oil, honey, salt, pepper, cinnamon, and red pepper flakes on a sheet pan.
- Roast the mixture for 20 minutes, until the tomatoes burst and the peaches soften.
- Cook the spaghetti in the boiling water for 10 minutes, then drain it.
- Mash the roasted mixture with the balsamic vinegar and basil in a large bowl.
- Toss the spaghetti with the roasted sauce and serve hot.
