Ingredients
- 16 oz jumbo shrimp
- salt and pepper to taste (optional)
- 1/4 cup egg whites
- 6 tbsp whole wheat italian seasoned breadcrumbs
- 2 tbsp panko crumbs
- 2 tbsp parmesan cheese
- olive oil spray
- 1/2 cup marinara or your homemade marinara sauce
- 1 cup shredded part skim mozzarella cheese
- 12 oz french bread
Steps
- Heat the oven to 425 F and line a baking sheet with foil.
- Dip the shrimp in egg whites, then coat them with breadcrumbs, panko, and Parmesan.
- Place the shrimp on the sheet, spray them with oil, and bake for 10 to 12 minutes, until they reach 165 F.
- Split the French bread and place it cut side up on the baking sheet.
- Spread the marinara over the bread, add the cooked shrimp and mozzarella, and bake for 5 to 7 minutes, until the cheese melts.
- Cut the bread into four portions.
