4 lb boneless beef short ribs
2 tsp kosher salt
1 tsp freshly ground black pepper
1 cup ketchup
3/4 cup dark brown sugar
1 1/2 tbsp cider vinegar
1 1/2 tbsp worcestershire sauce
1 1/2 tbsp dijon mustard
1 1/2 tsp chili powder
3/4 tsp garlic powder
1/4 tsp cayenne pepper

Steps

Heat the oven to 325 F.
Season the short ribs with salt and pepper.
Stir the ketchup, brown sugar, vinegar, Worcestershire sauce, mustard, chili powder, garlic powder, and cayenne in a bowl.
Place the ribs in a 9-by-13-inch baking dish and coat them with the sauce.
Cover the dish tightly with foil and bake for 2 hours and 45 minutes.
Remove the foil and bake for 15 minutes, until the ribs are tender and reach at least 145 F.
