Ingredients
- 3 lb red potatoes
- 1/4 cup unsalted butter
- 2 tbsp prepared pesto
- 1/4 cup water
- 4 cloves garlic
- 1 tsp salt
- 1/4 tsp pepper
- 1/4 tsp paprika
- 1/4 tsp onion powder
- 1/2 cup milk
- 1/2 cup sour cream
Steps
- Cut the potatoes into 1-inch pieces and place them in a 6-quart slow cooker with the garlic, water, butter, pesto, salt, pepper, paprika, and onion powder.
- Cover and cook on high for 4 hours until the potatoes are very tender.
- Warm the milk in a small saucepan over low heat for 3 minutes.
- Mash the potatoes in the slow cooker with the warm milk and sour cream until mostly smooth.
- Cover and cook on high for 10 more minutes, then stir until the potatoes are creamy.
