Ingredients
- 6 oz soba noodles
- 1 orange pepper
- 1 baby bok choy
- 3/4 cup frozen peas
- 2 eggs
- 2 tbsp milk
- 2/3 cup parmesan cheese
- 2 strips bacon
- salt & pepper
Steps
- Boil salted water in a large pot, cook the soba noodles for 5 minutes, and drain them.
- Cook the bacon in a 12-inch skillet over medium heat for 4 minutes until crisp.
- Add the orange pepper and bok choy, then cook for 3 minutes until tender.
- Stir in the peas and cook for 2 minutes until hot.
- Whisk the eggs, milk, Parmesan, salt, and pepper in a bowl.
- Lower the skillet heat, add the noodles and egg mixture, and stir for 2 minutes until the eggs are firm.
