Ingredients
- 2 roma tomatoes
- 1 clove garlic
- 1/2 small onion
- 4 tsp chicken bouillon powder
- 2 tbsp vegetable oil
- 7 oz fideo pasta or angel hair pasta
- 1/2 cup tomato sauce
- 6 cups water
- 1/2 tsp salt (optional)
- fresh cilantro (optional)
Steps
- Blend the tomatoes, garlic, onion, and 1 cup of the water until smooth.
- Heat the oil in a 4-quart pot and toast the fideo for 3 to 4 minutes, stirring often.
- Pour in the tomato mixture and cook for 3 minutes.
- Add the remaining water, tomato sauce, bouillon, and salt, then bring the soup to a boil.
- Simmer uncovered for 10 to 12 minutes until the noodles are tender.
