Ingredients

4 tsp sun dried tomato oil
1 lb uncooked shrimp
1 tbsp garlic
3 1/2 oz sun dried tomato strips in oil
1 cup grape tomatoes
3/4 tsp salt (optional)
1 tsp red pepper
2 tbsp fresh basil

Steps

Heat the sun-dried tomato oil in a large skillet over medium-high heat for 1 minute.
Cook the garlic and sun-dried tomatoes for 2 minutes, stirring often.
Add the shrimp, grape tomatoes, salt, and red pepper, then cook for 5 to 7 minutes.
Turn the shrimp once and cook until opaque and firm, reaching 145 F.
Stir in the basil and remove the skillet from the heat.
