- 1 1/4 cups flour
- 3/4 cup cornmeal
- 1/4 cup sugar
- 1/2 tsp baking powder
- 1 tsp kosher salt
- 3/4 cup unsalted butter
- 2 eggs
- 1 can (14 3/4 oz) creamed corn
- 1 can (15 oz) whole kernel corn
- 1 1/4 cups sour cream
Steps
- Heat the oven to 350 F and coat a 9-by-13-inch baking dish with cooking spray.
- Whisk the flour, cornmeal, sugar, baking powder, and salt in a large bowl.
- Stir the melted butter, eggs, creamed corn, whole corn, and sour cream into the dry mixture.
- Spread the batter in the dish and bake for 35 minutes.
- Cool the spoon bread for 5 minutes, until the center is set and the eggs are fully cooked.
