Ingredients
- 1/2 tbsp olive oil
- 1 ear fresh corn
- 1/2 red onion
- 2 large flour tortillas
- 4 oz grated cabot alpine cheddar cheese
- 3 ripe heirloom tomatoes
- 1 handful fresh basil leaves
Steps
- Cut the corn from the cob and chop the red onion, tomatoes, and basil.
- Heat the olive oil in a 10-inch skillet over medium heat and cook the corn and onion for 5 minutes.
- Place one tortilla in the skillet, cover it with cheddar, cooked vegetables, tomatoes, and basil, and top with the second tortilla.
- Cook the quesadilla for 3 minutes per side until crisp and the cheese melts.
