Ingredients
- 1 tbsp rapeseed oil
- 2 finely chopped leek
- 1 large courgettes
- 1 l vegetable stock
- 400 g cannellini beans
- 200 g green beans
- 3 chopped tomatoes
- 3 clove chopped garlic
- small pack basil
- 40 g parmesan
Steps
- Heat the rapeseed oil in a large pot over medium heat, then cook the leeks for 5 minutes.
- Add the zucchini, garlic, and green beans, and cook for 3 minutes.
- Pour in the vegetable stock, then add the cannellini beans and tomatoes.
- Bring the soup to a boil, reduce the heat, and simmer uncovered for 25 minutes, until the vegetables are tender.
- Stir in the basil and Parmesan, then simmer for 2 minutes.
- Season with salt and pepper before serving.
