Ingredients
- 1 large sweet potato rounds
- 3 tbsp extra virgin olive oil
- 2 cups red seedless grapes
- 1 large yellow onion
- 1 tsp balsamic vinegar
- salt & pepper
- sea salt and micro-greens for garnish (optional)
- 3 oz daiya jalapeno havarti style farmhouse block
Steps
- Heat the oven to 425 F.
- Brush the sweet potato rounds with one tablespoon oil and arrange them on a baking sheet.
- Toss the grapes and sliced onion with the remaining oil, vinegar, salt, and pepper.
- Roast the potatoes, grapes, and onion for 25 minutes.
- Top the potato rounds with the roasted grape mixture and sliced cheese.
- Bake at 425 F for 5 minutes, then garnish with sea salt and micro-greens.
