Ingredients
- 1/4 cup butter
- 2 lb ground beef
- 2 tsp salt
- 1/2 tsp allspice
- 1/2 tsp cinnamon
- 1/2 tsp black pepper
- 5 cups chicken stock
- 2 cups rice
- 2 tbsp butter
- 1/2 cup pine nuts
Steps
- Melt the first butter portion in a large skillet over medium heat and toast the pine nuts for 3 minutes, stirring often.
- Transfer the pine nuts to a bowl, then cook the ground beef in the skillet for 10 minutes until it reaches 160 F.
- Stir in the salt, allspice, cinnamon, and black pepper.
- Add the chicken stock and bring it to a boil over medium-high heat.
- Stir in the rice and remaining butter, then cover and simmer over low heat for 18 minutes.
- Rest the rice, covered, for 5 minutes, then sprinkle the toasted pine nuts over it.
