Ingredients
- 1 tsp vegetable oil
- 1 tbsp thai green curry paste
- 220 g stir-fry vegetables
- 150 g raw king prawns
- 150 ml coconut milk
- 225 ml vegetable stock
- 250 g udon noodles
- 10 g coriander
- 10 g basil
- 1 sliced red chilli
- 1 sliced spring onions
Steps
- Heat the oil in a large pot over medium heat and cook the curry paste for 2 minutes.
- Add the stir-fry vegetables and cook for 5 minutes.
- Pour in the coconut milk and vegetable stock, then simmer for 10 minutes.
- Add the udon noodles and cook according to their package directions, usually 3 to 5 minutes.
- Add the prawns and simmer for 4 to 6 minutes until pink and cooked through to 145 F.
- Stir in the coriander, basil, red chili, and spring onions before serving.
