Ingredients
- 2 tbsp ground flaxseeds
- 1/4 cup water
- 5 2/7 oz dairy-free dark chocolate
- 3 tbsp refined coconut oil
- 1/2 cup light brown sugar
- 1/3 cup unsalted roasted almonds
- 1 tsp pure vanilla extract
- 1 cup all-purpose flour
- 1/2 tsp baking powder
- 1/2 tsp salt
Steps
- Heat the oven to 350 F and line a baking sheet.
- Stir the flaxseeds and water in a small bowl, then let them stand for 5 minutes.
- Melt the dark chocolate and coconut oil together, stirring until smooth.
- Whisk in the brown sugar, flax mixture, and vanilla, then stir in the flour, baking powder, salt, and almonds.
- Scoop 12 portions onto the baking sheet and bake for 12 minutes, until the centers are set.
- Cool the cookies on the baking sheet for 5 minutes.
