Ingredients
- 1 1/2 lb 680g asparagus
- 1 tbsp olive oil
- salt and black pepper (optional)
- 8 oz cream cheese
- 2 tbsp half-half cream
- 1 cup mozzarella
- 1/3 parmesan cheese
- fresh chopped parsley (optional)
Steps
- Heat the oven to 425 F and place the asparagus in a 9-by-13-inch baking dish.
- Toss the asparagus with olive oil, salt, and pepper.
- Roast the asparagus for 8 minutes.
- Melt the cream cheese with the half-and-half in a small saucepan over low heat for 3 minutes.
- Pour the sauce over the asparagus and sprinkle on the mozzarella and Parmesan.
- Bake the casserole for 5 minutes until the cheese melts, then scatter parsley over it.
