Ingredients
- 1/2 avocado
- 1/4 cup mayonnaise
- 1/4 cup water
- 1 clove garlic
- 1/2 tbsp dijon mustard
- 2 tbsp lemon juice
- 1/2 tsp salt
- 1 cup panko breadcrumbs
- 1/2 tsp garlic powder
- 2 tbsp olive oil
- 1 pinch salt
- 12 oz green beans
- parmesan for topping (optional)
Steps
- Bring a medium saucepan of salted water to a boil.
- Boil the green beans for 5 to 7 minutes, until tender, then drain them.
- Toast the panko with olive oil and garlic powder in a skillet over medium heat for 3 to 4 minutes.
- Blend or mash the avocado, mayonnaise, water, garlic, mustard, lemon juice, and salt until smooth.
- Toss the warm green beans with the dressing, then top with toasted panko and parmesan if using.
