Ingredients
- 1 beet
- 1 tsp minced garlic
- 2 tbsp extra virgin olive oil
- 1/5 tsp dried parsley
- 1 pinch oregano
- 1 garlic naan flatbread
- 1/3 cup crumbled feta or goat cheese
- 1/2 cup baby arugula
- 2 1/2 slices thin heirloom tomato
- 1 tsp sweet balsamic glaze
Steps
- Wrap the beet in foil and roast it at 400 F for 35 minutes, until tender enough to pierce.
- Peel and thinly slice the beet, then toss it with the olive oil, garlic, parsley, and oregano.
- Spread the beet mixture over the garlic naan and top it with the cheese and tomato slices.
- Bake the flatbread at 400 F for 10 minutes, until the edges are crisp and the cheese is warm.
- Top the flatbread with arugula and drizzle it with the balsamic glaze.
