Ingredients
- 2 blood oranges zested
- 200 g butter softened
- 200 g light brown soft sugar
- 4 eggs
- 125 g plain flour
- 75 g polenta or cornmeal
- 2 tsp baking powder
- 100 g natural yogurt
- 2 1/2 tbsp milk (optional)
Steps
- Heat the oven to 350 F and grease a 9-inch round cake pan with butter.
- Slice the blood oranges thinly and arrange them across the bottom of the pan.
- Beat the butter and brown sugar until smooth, then beat in the eggs and orange zest.
- Mix in the flour, polenta, and baking powder, then stir in the yogurt and milk.
- Spread the batter over the oranges and bake for 40 to 45 minutes, until the center is firm.
- Cool the cake for 10 minutes, then invert it onto a plate.
