- 2 cups all-purpose flour
- 1 cup granulated sugar
- 2 tsp baking powder
- 1 tsp salt
- 1 cup plain greek yogurt
- 2 eggs
- 1/2 cup butter
- 1 tsp vanilla extract
- 1/2 cup old fashioned rolled oats
- 1 cup fresh blueberries
Steps
- Heat the oven to 350 F and grease a 9-by-5-inch loaf pan.
- Whisk the flour, sugar, baking powder, and salt together.
- Whisk the yogurt, eggs, melted butter, and vanilla together.
- Stir the wet mixture into the dry mixture, then fold in the oats and blueberries.
- Spread the batter in the pan and bake for 40 to 45 minutes.
- Cool the loaf in the pan for 10 minutes before slicing.
