Ingredients
- 7 carrots
- 1 lemon
- 1 lime
- 3 tbsp mirin seasoning
- 1 tbsp dijon mustard
- 2 tbsp sesame oil
- 1/2 tbsp soy sauce
- 1 red chili
- 4 cloves garlic
- 2 tsp ginger
- 1 tbsp coriander
- 1 green onion
- 1/4 cup roasted peanuts
Steps
- Shred the carrots and place them in a large bowl.
- Whisk the sugar, lemon juice, lime juice, mirin, mustard, sesame oil, soy sauce, garlic, and ginger in a small bowl.
- Pour the dressing over the carrots and toss until evenly coated.
- Slice the chili and green onion, then add them with the coriander and peanuts.
- Chill the salad for 20 minutes, then toss again before serving.
