Ingredients
- 3 packages (8 oz) cream cheese
- 3/4 cups sugar
- 3/4 tsp vanilla extract
- 5 large eggs
- 1 cup sour cream
- 3/4 cups cherry pie filling
- mint leaves (optional)
Steps
- Heat the oven to 325 F and grease a 12-cup muffin pan with cooking oil.
- Beat the cream cheese, sugar, and vanilla until smooth, then beat in the eggs one at a time.
- Fold in the sour cream and divide the mixture among the muffin cups.
- Top each cup with cherry pie filling and bake for 30 minutes, until the centers are firm.
- Cool the cupcakes in the pan for 20 minutes before removing them.
