400 g chicken breasts
3 tomatoes
1 tsp tomato puree
1/2 tsp chili powder
2 tbsp olive oil (optional)
2 tsp pureed garlic
2 tbsp fresh coriander
1 small onion
salt & freshly ground black pepper

Steps

Cut the chicken, tomatoes, and onion into bite-size pieces, then toss them with tomato puree, chili powder, garlic, coriander, salt, pepper, and olive oil.
Heat the broiler and position an oven rack 6 inches from the heat.
Thread the chicken, tomatoes, and onion onto skewers and place them on a foil-lined broiler pan.
Broil for 12 minutes, turning the skewers every 4 minutes.
Broil for 3 to 5 minutes more, until the chicken is browned and reaches 165 F.
