Ingredients
- 1 1/2 cups white whole wheat flour
- 1 1/2 tsp cornstarch
- 1/4 tsp salt
- 3/4 tsp baking powder
- 2 tsp pumpkin pie spice
- 1/2 cup plus 1 tablespoon mashed avocado
- 3/4 cup brown sugar
- 3 egg yolks
- 1 1/2 tsp vanilla extract
- 1 1/2 tbsp honey
- 1/4 cup plus 2 tablespoons mini chocolate chips
- 1 cup candy corn pieces (optional)
Steps
- Heat the oven to 350 F and lightly oil a 10-inch ovenproof skillet.
- Whisk the flour, cornstarch, salt, baking powder, and pumpkin pie spice together.
- Beat the avocado, brown sugar, egg yolks, vanilla, and honey until smooth.
- Stir the dry mixture into the avocado mixture, then fold in the chocolate chips and candy corn if using.
- Press the dough evenly into the skillet and bake for 28 minutes.
- Cool the cookie cake in the skillet for 15 minutes before cutting.
