Ingredients
- 2 cups full fat canned coconut milk
- 2 egg yolks
- 4 tbsp cornstarch
- 1/3 cup sugar
- 1 pinch salt
- 1/4 tsp vanilla extract
- coconut flakes or shredded coconut (optional)
Steps
- Whisk the egg yolks, cornstarch, sugar, and salt in a medium saucepan.
- Slowly whisk in the coconut milk until smooth.
- Cook over medium heat for 10 to 12 minutes, whisking constantly, until thick and bubbling.
- Remove the pan from the heat and stir in the vanilla.
- Divide the pudding among four dishes and cool for 20 minutes.
- Cover and chill the pudding for 4 hours before adding coconut, if using.
