Ingredients
- 2 lb asparagus
- 3 tbsp unsalted butter
- 2 tbsp olive oil
- 5 cloves garlic
- 1/2 cup parmesan cheese
- 1/2 cup panko breadcrumbs
- 2 tsp parsley
- 1 pinch salt (optional)
- 1 pinch pepper
Steps
- Heat the oven to 425 F and arrange the asparagus on a large baking sheet.
- Melt 1 tablespoon of butter with the olive oil and garlic in a small skillet over medium heat for 2 minutes.
- Pour the garlic mixture over the asparagus and toss with salt and pepper.
- Roast the asparagus for 12 to 14 minutes, until tender.
- Melt the remaining butter in the skillet, then toast the panko for 3 to 4 minutes.
- Stir the parmesan and parsley into the panko, scatter it over the asparagus, and broil for 1 to 2 minutes.
