Ingredients
- 1/2 cup oat flour
- 1/2 cup almond flour
- 1/4 tsp salt
- 1/2 tsp cinnamon
- 1 1/2 tsp flaxseed meal
- 7 1/2 soft dates pitted
- 1 cup pumpkin puree
- 1/4 cup raw cashews
- 9 1/2 dates
- 2 tsp cornstarch
- 1/8 tsp salt
- 1/2 tsp vanilla extract
- 1 tsp pumpkin pie spice
- 1/4 cup non dairy milk such as almond
Steps
- Soak the cashews in water for 30 minutes, then drain them.
- Heat the oven to 350 F.
- Pulse the oat flour, almond flour, salt, cinnamon, flaxseed meal, and 7 1/2 dates into a sticky mixture.
- Press the crust mixture into eight muffin cups.
- Blend the pumpkin, cashews, 9 1/2 dates, cornstarch, salt, vanilla, pumpkin pie spice, and milk until smooth.
- Fill the crusts and bake for 30 minutes.
- Chill the pies for 45 minutes before serving.
