Ingredients
- 1 cup vanilla wafer cookie crumbs
- 1 tbsp granulated sugar
- 3 tbsp unsalted butter
- 3/4 cup granulated sugar
- 1 1/2 tbsp all-purpose flour
- 16 oz cream cheese
- 2 large eggs
- 1/4 cup sour cream
- 3 tbsp heavy cream
- 1 1/2 tsp vanilla extract
- 1/2 tsp almond extract
- 1/4 cup + 2 tsp rainbow jimmies sprinkles (optional)
- sweetened whipped cream (optional)
Steps
- Heat the oven to 325 F and line a 12-cup muffin pan with paper liners.
- Mix the wafer crumbs, one tablespoon sugar, and melted butter, then press the mixture into the cups.
- Beat the cream cheese, remaining sugar, flour, eggs, sour cream, heavy cream, vanilla, and almond extract until smooth.
- Fold in the sprinkles, divide the batter among the cups, and top with more sprinkles.
- Bake at 325 F for 20 minutes, then cool the mini cheesecakes for 11 minutes.
