Ingredients
- 2 tsp unsalted butter
- 2 cloves garlic
- 1 large shallot
- 2 cups broth
- 1 cup milk
- 1/4 tsp garlic powder
- 1/4 tsp sea salt
- 1/4 tsp black pepper
- 1 cup dry orzo pasta
- 3/4 cup freshly grated parmesan cheese
- 2 cups chopped fresh spinach
Steps
- Melt the butter in a 10-inch skillet over medium heat.
- Cook the chopped shallot and garlic for 2 minutes.
- Stir in the orzo and cook for 1 minute.
- Add the broth, milk, garlic powder, salt, and pepper, then simmer for 10 minutes, stirring often.
- Stir in the spinach and cook for 2 minutes, until wilted and the orzo is tender.
- Remove from the heat and stir in the Parmesan cheese.
