Ingredients
- 2 large aubergine
- 2 tbsp olive oil
- 250 g greek yogurt
- 3 tbsp tahini paste
- 1 clove peeled crushed garlic
- 1 lemon
- 1 handful coriander
- 1 handful parsley
- 1 handful mint
Steps
- Slice the aubergines lengthwise, brush them with olive oil, and season with salt and pepper.
- Heat a grill pan over medium-high heat and griddle the aubergine slices for 6 minutes per side.
- Stir the yogurt, tahini, garlic, lemon juice, salt, and pepper together in a bowl.
- Chop the coriander, parsley, and mint, then fold them into the dressing.
