Ingredients
- 1/2 cup mayonnaise
- 1 clove garlic
- 2 tsp grated lemon zest
- 2 tbsp fresh lemon juice
- 1/2 tsp kosher salt
- 1/4 tsp freshly cracked black pepper
- 1 tsp smoked paprika
- 1 tsp honey
- 18 grilled scallops
- 4 cups loosely packed arugula
Steps
- Whisk the mayonnaise, garlic, lemon zest, lemon juice, salt, pepper, paprika, and honey in a small bowl.
- Heat a grill to medium-high.
- Grill the scallops for 2 to 3 minutes per side, until opaque and 145 F inside.
- Toss the arugula with 2 tablespoons of the lemon aioli.
- Serve the hot scallops with the dressed arugula and remaining aioli.
