- 4 zucchini
- extra-virgin olive oil
- 1/2 tsp kosher salt
- 1/2 tsp freshly ground black pepper
- juice of 1/2 lemon
- 3 oz goat cheese
- 1/4 cup toasted pine nuts
- 1/8 cup parsley leaves or fresh thyme leaves (optional)
Steps
- Heat a grill to medium-high, about 400 F.
- Slice the zucchini lengthwise, then brush both sides with olive oil and season with salt and pepper.
- Grill the zucchini for 4 to 5 minutes per side until tender and lightly marked.
