Ingredients
- 4 dried ancho chiles
- 3 dried guajillo chiles
- 5 cloves garlic
- 1/2 large white onion
- 1/4 cup red wine vinegar
- 1 tbsp smoked paprika
- 2 1/2 tsp ground coriander
- 2 tsp kosher salt
- 2 tsp ground black pepper
- 2 tsp ground cumin
- 2 lb ground pork
Steps
- Remove the stems and seeds from the ancho and guajillo chiles.
- Cover the chiles with boiling water and let them soften for 10 minutes.
- Blend the softened chiles, garlic, onion, vinegar, paprika, coriander, salt, pepper, and cumin into a smooth paste.
- Mix the chile paste thoroughly into the ground pork.
- Cook the pork in a large skillet over medium heat for 10 to 12 minutes, breaking it apart until it reaches 160 F.
