Ingredients
- 175 g plain flour plus extra for dusting (optional)
- 100 g cold salted butter cut into cubes
- 335 g icing sugar
- 1/2 tsp vanilla extract
- 2 egg yolks
- 100 g raspberry jam
- 50 g glacé cherries quartered
Steps
- Heat the oven to 350 F and line a large baking sheet with baking paper.
- Rub the cold butter into the flour and 50 grams of icing sugar until crumbly.
- Mix in the egg yolks and vanilla, then press the dough together and chill it for 10 minutes.
- Roll the dough on a lightly floured surface to 1/8-inch thickness and cut 26 rounds.
- Bake the rounds for 10 to 12 minutes until lightly golden, then cool them completely.
- Spread jam over 13 biscuits, top with the remaining biscuits, and mix the remaining icing sugar with a little water for icing.
- Spread icing over each sandwich and finish with the quartered cherries.
